Sous Chef is required for an incredible role based in Mid Wales.  

KSB Recruitment is looking for a Sous Chef to work in a sporting shooting estate. This is a unique role that requires a huge amount of flexibility on your behalf.  The variety comes from you will cooking for residential guests in lodges and outdoor in the beautiful welsh countryside. The company also owns a gastro pub on the estate you will be required to help out there when required. The estate also offers tasting menus, private dinners, and weddings, no two days will be the same. Our client's aim is to give the guests the best possible experience when staying. Cooking fresh local ingredients this Sous Chef role is very different  you will need to multi-task on a daily if not hourly basis

The Role:

  • Working with fresh and locally sourced ingredients
  • Working in a 2 rosette standard
  • Overseeing/ supporting the Head Chef with their duties
  • Ensure compliance with all health and safety regulations within the kitchen 
  • Able to cook food in a timely manner whilst maintaining a high standard of food
  • Be able to slightly modify recipes to meet the guest requirements
  • Able to prepare a high volume of food
  • Communication with the FOH team is at its very best all the time
  • Be flexible at all times as no two days will be the same

What We'd Love You To Have:

  • Previous experience working as a Sous Chef 
  • Excellent time management skills
  • Willing to work well as a team
  • Have an enthusiastic and positive attitude towards work
  • Have the confidence to take charge of the kitchen when the Head Chef is unavailable 
  • Be prepared to work in a fast-paced environment 

Must have:

  • A clean driving licence (with no more than 3 points)
  • Worked in a 2 rosette environment or high-quality Food
  • Experienced working with a variety of cooking methods
