Chef de Partie - East Sussex

Location: Countryside Estate, South East England
Salary: £33,000–£34,000 per annum
Contract Type: Permanent, Full-Time
Hours: 45 hours per week (Wednesday to Sunday, 9am–6pm)
Restaurant Type: Estate Restaurant with Seasonal, High-Quality Menu

We are a well-established estate restaurant located in a stunning rural setting, offering an exceptional dining experience centred around quality seasonal produce. Our restaurant is led by a highly respected, award-winning Head Chef, renowned in the industry for innovation and culinary excellence. We pride ourselves on delivering consistently high standards and fostering a professional, collaborative kitchen environment.

What We Offer:

● Competitive salary between £33,000–£34,000 per annum
● Straight daytime shifts – no evenings
● Set working week: Wednesday to Sunday

This role is ideal for chefs looking to refine their skills in a high-standard kitchen that values seasonality, creativity, and professional growth.

Key Responsibilities:

● Prepare and serve food from a seasonally changing menu
● Support the Head Chef and Sous Chef with kitchen operations
● Ensure dishes are consistently prepared to high standards
● Maintain a clean, safe, and efficient working environment
● Follow HACCP procedures and food safety regulations
● Take responsibility for kitchen organisation and stock rotation
● Complete kitchen records, including temperature checks and daily logs
● Promote positive teamwork and clear communication

Requirements:

● Experience working in gastro pubs or restaurants to a high standard
● Skilled in preparing fresh, seasonal food
● Professional, disciplined, and detail-focused approach
● Strong communication and teamwork abilities
● Willingness to learn and share culinary knowledge
● Own transport is essential due to the rural location
