£28,000 + service charge OTE up to £34,00
Full-Time | Permanent | Own transport essential
Shifts: Wednesday–Saturday 12pm–10pm, Sunday 10am–6pm (Monday & Tuesday off)
The Opportunity
We’re working with one of Sussex’s most prestigious wine estates to recruit a Chef de Partie for their rustic-luxe restaurant – serving elegant, seasonal dishes in a relaxed but high-quality dining setting. This is a fantastic opportunity to join an award-winning hospitality team, working under the guidance of a highly respected Executive Chef. You'll be preparing food that celebrates local ingredients, cooked simply and beautifully. Think: wine-paired plates, seasonal seafood lunches, summer courtyard roasts, and a steady pace with consistent hours – all in one of the most picturesque locations in the South Downs.
The Role
This is a hands-on position ideal for someone who’s calm under pressure, proud of their craft, and keen to continue learning. You’ll be responsible for managing your section, ensuring consistent quality, and contributing to daily prep and smooth service across a variety of menus.
Weekly Service Overview
Evening Service (Wed–Sat): Up to 40 covers, 2–3 course set menu
Saturday Seafood Lunch (Summer): 60–95 covers in the courtyard
Sunday Roasts (Summer/Winter): 60–95 covers, indoor or courtyard dining

What We’re Looking For
A proven background in fresh food kitchens – ideally gastropubs, bistros, or destination restaurants
Confidence managing a section independently
Strong communication skills across the brigade during service
Pride in presentation, timing, and consistency
A professional attitude, with the desire to learn and contribute
Your own reliable transport – due to rural location
